Abstract

Food is a basic need for humans, a nation can be said to be prosperous if food needs are fulfilled for its citizens. The current condition of rice farming in Banten Province has decreased yields. In dealing with this, the need for knowledge and public awareness of alternative foods to replace rice. Indonesia itself is very rich in alternative foods to replace rice such as corn, cassava, sweet potatoes, and sorghum. Sorghum is one of the alternative foods that can be used as an option for the community. One of the reasons sorghum is an alternative food choice is because it is easy to produce with resistance to extreme soil conditions and has better nutritional value than rice. Sorghum seeds have good nutritional content, such as carbohydrates, proteins, fats, minerals, and vitamins, and do not contain gluten as found in wheat, making it safe for people with gluten intolerant diseases. Sorghum has a lower sugar content than rice, and contains more protein. In addition, sorghum can be processed into various processed foods such as bread, rice, and others.
